Zalema * Late harvest

A wine dedicated to two generations, a tribute to mothers and grandmothers, women who devote themselves to giving us care and tenderness.

ELABORATION

After a painstaking selection of bunches of grapes in the vineyard, we leave the smallest and less compact on the vines. During the late autumn and early winter we make our first inroads into the vineyard to harvest any bunches that have reached an optimal state of raisin production. In the winery we obtain a highly concentrated must that will ferment in used French oak barrels.

APPEARANCE

Amber colour with copper-coloured legs.

 

NOSE

High intensity, aromas of chocolate, very ripe fruit, dried apricots, caramel and notes of dried figs.

 

MOUTH

In the mouth it is pleasant, creamy and rich in glycerine. 

A pronounced acidity keeps the wine alive and balances the sugars with freshness.

 

 

BLEND AND SERVICE

 

All kinds of desserts. Its acidity also allows for other types of pairings such as foie gras and cheeses.
It should be served at between 12-14 ºC.
